Tres Leches Cake

I have a new found love for Tres Leches cake, and today I have decided to post a super easy and pretty fast recipe for your convenience! Because of that, this recipe includes a boxed cake mix. However, you can easily replace that with your own homemade yellow cake recipe if you are feeling ambitious, or just buy an un-frosted, pre-made yellow cake from your local grocery store/bakery to make it even easier!

What you'll need:

1 box of your favorite brand yellow cake mix plus all ingredients required on the back of the box (eggs, oil, water)

14 oz. sweetened condensed milk. 

(evaporated milk is not the same thing)

1 cup whole milk or evaporated milk

1 cup whipping cream
                                                       
Optional frosting and fresh fruit of your choice


So, here is what you'll do:


Step 1- Bake your chosen cake mix as directed on the box. I preffer Duncan Hines because it's pretty dense for a cake mix and I'm not a "light & fluffy" kind of gal.

Step 2- Once baked, let stand for about 5 minutes. Poke top of hot cake every 1/2 inch with fork, wiping fork occasionally to reduce sticking.

    NOTE: It's best to use a long-tined fork so it goes down     deeper.

Step 3- In large bowl, stir together sweetened condensed milk, whole milk and whipping cream. Carefully pour evenly over top of cake. Cover; refrigerate about 1 hour or until mixture is absorbed into cake.

Here is where frosting is optional. I prefer to either use a tub of whipped cream (or remaining from recipe above) as frosting and then top with slices of fresh strawberries. But frosting and fruit or not, this cake tastes unbelievably delicious!
